Fried beans with Sauteed Greens and Smoked Salt
Ingredients
1 tsp olive oil/ghee/coconut oil
1 tsp olive oil/ghee/coconut oil
2 tbs. red onion, chopped
1 cup beans, precooked and dry (if they are wet they won't crisp up well)
1 -2 cups kale, washed and roughly chopped
pinch smoked salt to taste (I use alderwood smoked sea salt from Stonehouse Olive Oil company)
toasted pumpkin seeds
In a frying pan over medium-high heat, heat the oil. Add the beans and let sizzle for about 3 minutes. Add the chopped onions, salt and toss together, and let cook about 3 minutes more until the beans are fully crisp. Add the chopped greens and a sprinkle of water. Partially cover the pan and cook over medium heat for 3-5 minutes, until the flavors have combined and the greens are tender. Mix well, sprinkle with pumpkin seeds and enjoy!
That sounds amazing. I did some Rancho Gordo Marrow beans tonight with the Alderwood smoked salt with a bunch of dino kale (a la Jamieliving). Always a hit! YUM!
