Rainy Day Make-shift Meal

It has been raining for 5 days straight!  I know that is not a big deal if you live in Seattle but for the Bay Area, this is freaking wet.  Deciding to enjoy my rainy day to the fullest, I had already planned on indulging in the remainder of an amazing lentil soup I made a few days ago. Little did I know the husband (more on him later) took it for lunch.  Darn him!  So, what about my perfect rainy day meal?  As I scour the fridge I find left over cooked borlotti beans, pumpkin seeds, and fresh red russian kale.  The result, fried beans with sauteed greens and smoked salt.  YUM!   

Fried beans with Sauteed Greens and Smoked Salt

Ingredients

1 tsp olive oil/ghee/coconut oil
2 tbs.  red onion, chopped
1 cup beans, precooked and dry (if they are wet they won't crisp up well)
1 -2 cups kale, washed and roughly chopped
pinch smoked salt to taste (I use alderwood smoked sea salt from Stonehouse Olive Oil company) 
toasted pumpkin seeds


In a frying pan over medium-high heat, heat the oil.  Add the beans and let sizzle for about 3 minutes. Add the chopped onions, salt and toss together, and let cook about 3 minutes more until the beans are fully crisp.  Add the chopped greens and a sprinkle of water. Partially cover the pan and cook over medium heat for 3-5 minutes, until the flavors have combined and the greens are tender.  Mix well, sprinkle with pumpkin seeds and enjoy!

  1. That sounds amazing. I did some Rancho Gordo Marrow beans tonight with the Alderwood smoked salt with a bunch of dino kale (a la Jamieliving). Always a hit! YUM!
